4 tablespoons butter, room temperature (I use light olive oil)

1 cup butter, softened

1 cup light brown sugar, packed

1/4 cup pure maple syrup

2 eggs

1 teaspoon vanilla extract

1/2 cup flour

1/2 cup pecans, coarsely chopped

2/3 cup almond milk (or regular milk)

Steps:

1. Melt the butter. Whisk in brown sugar, maple syrup, and eggs until blended.

We make these low carb cookies so often that we have lost count of how many we have made. In our four years of making these low carb cookies we have had so many requests that we have expanded the recipe into three different kinds of cookies: Peanut Butter Chocolate Chip, Peanut Butter Chocolate Chip Cookie, and Low Carb Peanut Butter Cookies. Each cookie is perfect for a snack but the Peanut Butter Chocolate Chip is by far our favorite.

Ingredients

Canola oil for the tops and bottoms of the cookies

1/2 cup pecans or hazelnuts chopped

1/2 cup oats

1/4 cup maple syrup or honey

2 tsp. vanilla

1/2 cup Swerve (or your favorite powdered sweetener)

3 eggs

2 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. salt

1 1/2 tsp. ground cloves

1 1/2 cups packed brown sugar

3/4 cup unsweetened almond milk

In a mixing bowl, mix the first six ingredients. Sprinkle in the baking soda, cinnamon, and salt, and set aside.
